Pumpkin Roll:



Beat 3 eggs in mixer on high for 5 min. Gradually add 1 c sugar. Stir in 2/3 canned pumpkin & 1 tsp lemon juice.
Sift together:
¾ c flour
2 tsp cinnamon
½ tsp nutmeg
1 tsp baking powder
1 tsp ginger
½ tsp salt

Fold into pumpkin mixture. Spread onto greased and floured cookie sheet (11x16) Put waxed paper on cookie sheet and grease and flour the paper.
Bake at 375 for 15 min. Turn out on clean dish towel that is sprinkled with powdered sugar. Sprinkle more powdered sugar on top. Roll. Cook. Unroll. Beat together:
1 c powdered sugar
4 tbsp margarine
6 oz cream cheese
1 tsp vanilla
Spread this mixture over the roll. Roll back up. Sprinkle with powdered sugar. Chill. Slice. Enjoy!
