New York Cheesecake:



Crust:
2 c graham crackers, crushed (13 crackers)
6 tbsp melted butter
Preheat oven to 350. Butter spring form pan. Mix crumbs & butter and pressing bottom of pan & ½ way up sides. Bake 5 min.

Filling:
3- 8 oz. cream cheese
3 egg
1 tbsp grated lemon
1 1/3 c sugar
¼ c. fresh lemon juice
2 tsp vanilla
Beat cream cheese until soft. Add eggs one at a time. Add other ingredients. Pour into crust. Bake 40 minutes. It will look puffed.

Topping:
2 c. sour cream
1 tsp vanilla
Blend all ingredients & spread on top & bake 15 min. (It will not look set.) Cool at least 30 minutes (It will then set)

Lemon Glaze:
¾ c water
1 egg yolk
½ c sugar
1 ½ tbsp cornstarch
1/3 c fresh lemon juice
2 tsp lemon peel
1 tbsp butter
¼ tsp salt
Combine water, lemon juice & egg yolk in sauce pan. Add sugar, cornstarch, & salt. Cook on low & bring to a boil, stirring constantly for 10 min. Stir in butter & lemon peel until butter is melted. Cool for 20 min. & spread on cheesecake.
