I was someone who liked to cook until I became a mother. That still hasn't changed. It has just changed what I cook more often than I'd like to.
Rhubarb Crisp
1 c. flour
1 c. brown sugar
1/2 c. margarine melted
1 c. granulated sugar
1 tsp. vanilla
3/4 c. oatmeal- quick oats, uncooked
1 tsp. cinnamon
4 c. finely cut rhubarb
1 c water
2 Tbs. cornstarch
Combine flour, oatmeal, melted butter, brown sugar and cinnamon. Mix until crubly. Press half of crumbs into greased 8" x 8" pan. Top with rhubarb. Combine granulated sugar, water and vanilla with cornstarch. Cook over low heat until thickened and clear. Pour over crumb mixture. Top with remaining crumbs. Bake at 350 for 1 hour.
