1 c. lentils (1/2 pkg.)
5 c. water
1 onion, chopped finely
1 carrot grated
1 green pepper, chopped
1 lrg. can diced tomatoes (28 oz)
3 Tbs. flour
1 can beef consume soup
3 tsp salt
2 tbsp vinegar
4 slices crispy bacon chopped
3 tbsp margarine
Cook lentils in boiling water 1 hour. While they cook, chop vegetables finely. Fry chopped bacon. Add vegetables to bacon – grease & all. Stir fry 10 min. Add vegetables & bacon to cooking lentils. Using the frying pan from the bacon, add margarine & melt. Stir in flour until smooth. Add consume soup, salt & vinegar. Thicken. Add to lentil mixture. Simmer 30 min. on medium heat. I double this when I make it. Family favorite!
